The restaurant is an intimate and sophisticated venue, combining sleek black furnishings and hanging pendant lights with exposed brick and polished concrete. Undoubtedly, the centrepiece of the restaurant is the open kitchen with its glowing fires. Apollo transformed the heritage-listed building through meticulous restoration, reusing salvaged timber floorboards and conducting extensive masonry works to repoint the brickwork, ensuring the building's original character was faithfully retained. The four-storey, split-level space features distinct areas that pay homage to the building's original character—the main dining room, wine bar, rooftop bar, and private dining area.
